Peanut Encrusted Catfish

1 lb catfish fillets
1 cup milk
1 Tblsp "Salt-Free Cajun"
¼ lb of finely chopped salted peanuts
¼ cup flour

1. Combine the milk and "Salt-Free Cajun".

2. Soak the fishfillets/nuggets in the seasoned milk for 15 mins.

3 Combine the finely chopped peanuts with the flour.

4. Drain the fish pieces and coat them well with the peanut/flour mixture.

5. Place coated fish on a greased cookie sheet and spray the fish with non-stick cooking spray or drizzle with melted butter.

6. Bake the fish at 400° for about 15 min's, or until fish flakes easily with a fork.

That recipe says "two servings". I'd have to double it just to feed me.

As far as the butter drizzled, I'd use a "Jalapeño Dusted" seasoned butter.
